Summertime and the livin’ is easy. Perfect time for a refreshing strawberry salad with homemade poppy seed dressing. That’s right…homemade.
The heck with those bottled dressings, all full of preservatives; disodium guanylate, disodium inosinate, sorbic acid, xanthan gum! Who needs it…even my computer doesn’t think these are real words, but they’re in the bottled stuff! I’m going to show you how you can make your own homemade poppy seed dressing and it only takes a few minutes to put together.
Start with a few basic ingredients…and these are ingredients that you probably have in your pantry right now. Honestly, I had to go to the store to pick up honey, fresh strawberries, blueberries and poppy seeds. But before I left, I didn’t check in the spice box that Mary Jo brought up to Minnesota from Florida. Who would have thought that she would bring poppy seeds? I didn’t. So now we have two nearly full bottles of poppy seeds. I don’t think they go bad. (I checked. 2-year storage life). I’m loving Mary Jo’s poppy seed bread more and more!
As far as the salad goes, you’ve all probably had this salad or a variation of this at some point. I’m kind of a traditionalist and go with the lettuce, strawberry, blueberry, and feta cheese variety. The standard Red, White, and Blue. It tastes so good with the slightly sweet poppy seed dressing. But you know, you can use whatever suits your taste. Mix up some greens of your choosing, add strawberries, blueberries….or mango, mandarin orange slices, raspberries, even bananas. Just about anything would taste good with this tasty dressing.

Strawberry Salad with Homemade Poppy Seed Dressing
Ingredients
Dressing
- 1/4 cup white wine vinegar
- 1/4 cup honey
- 1 tbsp poppy seeds
- 2 tsp grated onion
- 1/4 tsp salt
- 1/2 tsp whole grain mustard
- 1 tsp corn starch
- 2 tsp mayonnaise
- 2 tbsp olive oil
- 2 tbsp vegetable oil
Salad
- Romaine lettuce , spinach, or greens of choice
- Sliced strawberries
- blueberries
- crumbled feta cheese
Instructions
Dressing
- Whisk together in a medium sized bowl, the vinegar and honey
- Add the remaining ingredients and whisk until all ingredients are incorporated
- Makes 3/4 cup, (12 tbsp).
- Store, refrigerated in a jar
- The dressing will separate...stir or shake before serving

Yum, yum, yum! I’ve never cared much for poppy seed dressing, but this recipe isn’t as sweet as all the other ones I’ve had.
