Easy Chicken Salad Recipe With Grapes And Walnuts

This is a great tasting cold chicken salad that's good for a main meal, lunch, or brunch. Try it as a sandwich spread or a lettuce wrap.

Ingredients

  • 1.25-1.5 lbs. Chicken breast or dark meat, chopped to bite-sized pieces Use a rotisserie chicken or home-baked chicken.
  • 2 cups Seedless Grapes, green or red, halved or quartered
  • 1 cup Roasted Walnuts, chopped Sub. pecans
  • 1 cup Celery chopped fine, 3 or 4 stalks
  • 1/4 cup Red Onion finely chopped
  • 3 tbsp. White wine vinegar
  • 3 tbsp. Tarragon fresh or dried, chopped or crushed
  • 3/4 cup Mayonnaise Sub. Greek yogurt
  • 1/2 tsp. Salt and Black pepper (each)

Instructions

  • Prepare the salad by first chopping the celery and onion. Then, chop or shred the chicken. Chop fresh tarragon.
  • Using a large bowl, mix all the ingredients together until there is an even coating of mayonnaise throughout.
  • Taste the salad and add more salt, pepper, vinegar, or tarragon if desired. The distinct tarragon flavor should be present. Cover and refrigerate the salad for 1 hour for the flavors to develop. Serve cold.

Notes

  1. If not using a store-bought rotisserie chicken, cook your desired pieces of chicken and allow to cool before assembling the salad.
  2. Add apple pieces for a Waldorf-style chicken salad.
  3. Remember to safely store the salad to prevent spoilage.
