Chocolate Chip Energy Bites Recipe (No Bake)

Fun snack item to satisfy your sugar cravings and because they taste great.

Ingredients

  • 1 1/4 cups Old fashioned rolled oats
  • 1/2 cup peanut butter
  • 1/3 cup maple syrup or honey
  • 1/2 cup mini chocolate chips
  • 2 tbsp chia seeds
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  • Mix all ingredients well in a large bowl, then place in the refrigerator for 30 minutes or more to firm up.
  • Use a #50 cookie scoop to make the energy balls. Press the mixture in well to ensure the mix adheres well.  If forming by hand, make 1" balls compressing with your hands.  If the mix gets too sticky, return to the refrigerator again.
  • Store the energy bites in the refrigerator in a covered container.  A #50 scoop makes 20 balls.

  2. I made the coconut and almond bites with standard peanut butter and used 1/3 cup chocolate chips, 1/3 cup coconut and 1/3 cup chopped almonds. All other ingredients were the same as the recipe indicates.
