  • 1 large sweet potato, (1 pound), peeled and shredded
  • 3 tbsp olive oil
  • 1/2 medium yellow onion, diced
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1/3 cup toasted, chopped walnuts
  • 2 tbsp fresh mint, chopped
  • 1 tbsp lemon juice
  • 1/4 tsp smoked paprika
  • 1/4 cup dry white wine, like sauvignon blanc
  • 1 tsp light brown sugar

  • Shred the sweet potato using a grater attachment on a food processor or KitchenAid stand mixer. Set aside.
  • In a skillet on medium heat add olive oil and onion and cook until softened, 4 or 5 minutes.
  • Add the shredded sweet potato, salt, pepper and smoked paprika, and stir to combine with the onion. Cover and cook for 5 minutes, stirring every minute or so.
  • Uncover, then add the remaining ingredients and fold to combine. Remove from the heat.
  • Serve right away or let cool, cover and refrigerate. Reheat in a microwave oven.
