1can15 oz. tomato sauce
1/2tspground black pepper
1 1/2 cupslow-fat small curd cottage cheese
8ozwide egg noodles, cooked to al dente
1cupsharp cheddar cheese, grated
Preheat oven to 350°.
Boil the noodles to al dente according to package directions, drain and reserve. At the same time, brown the ground chuck in a large skillet, (about 10 minutes). Skim off the excess fat.
Add the tomato sauce, salt and pepper to the meat, stir together and heat for 4 to 5 minutes.
In a medium sized bowl, mix together the sour cream and cottage cheese, then add the chopped scallions.
Place the cooked noodles into a large bowl, stir in the cheese mixture, then the meat sauce.
Spray a shallow 1 1/2 to 2 quart casserole dish with cooking spray, then add the noodle bake ingredients. Top the casserole with grated cheese and place in the oven, 15 to 20 minutes until the cheese is melted.
