Fresh Greens Salad with Basil Mint Vinaigrette

Ingredients

  • 1/3 cup fresh basil, packed 20 good sized leaves
  • 1/2 cup fresh mint leaves, packed 15 to 20 leaves
  • 1/3 cup extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 clove garlic
  • 1/4 tsp kosher salt

Instructions

  • Place all ingredients into a small food processor and run until finely chopped
  • Add vinaigrette to a bowl of greens and vegetables for a family sized tossed salad, or add 2 to 2 1/2 tablespoons to an individual salad.

Notes

  1. The salad I made consisted of leafy greens, sliced strawberries, toasted walnuts, sliced red onion, and a little chopped green onion.
