Toasted Pita Bread Salad

Ingredients

  • 3 pita bread semicircles , edges trimmed and cut in half
  • 2 tbsp olive oil
  • salt and pepper
  • garlic powder , if desired
  • 3 to 4 ounces arugula , (large handful), coarsely chopped
  • 1/2 cup chopped cilantro
  • 2 tomatoes cut into 3/4 inch pieces
  • 1/2 English cucumber peeled and sliced
  • 4 green onions finely chopped
  • juice of 1 lemon , (3 to 4 tbsp)
  • 1 garlic clove minced and then pasted
  • 3 or 4 tbsp olive oil

Instructions

  • Preheat oven to 375° and place rack in the center
  • Prepare the pita bread by cutting off the edge, cut the round in half and separate
  • Brush the inside of the bread with olive oil then add salt and pepper and garlic powder if desired.
  • Place the bread on a cooling rack inside a sheet pan, oiled side up
  • Place in the oven for 10 to 12 minutes until browned, turning occasionally for even browning
  • Remove and cool
  • Squeeze the lemon juice into a small bowl then add the garlic which has been pasted by flattening with a knife, set aside until used,
  • Mix the arugula, cilantro, tomato, cucumber and green onion in a large bowl and combine.
  • When ready to serve, add the toasted pita bread that has been broken into 1/2 inch pieces, then add lemon juice, then drizzle with 3 or 4 tbsp olive oil, mix and serve right away
