Baked Tilapia Parmesan

Ingredients

  • 4 tilapia fillets , 5 to 6 oz each
  • 1/2 cup grated parmesan
  • 3 tbsp butter at room temperature
  • 3 tbsp mayonnaise or substitute Greek yogurt
  • 3 chopped green onions , light green and green parts
  • 1 tbsp tomato paste
  • 1/4 tsp Old Bay seasoning
  • 1/4 tsp dried basil.
  • 1 tsp Franks hot sauce , or other hot sauce
  • salt and pepper to taste

Instructions

  • Pre-heat oven to 350°
  • Place the fillets on a foil lined sheet pan, salt and pepper them, and bake for 10 to 15 minutes until nearly done. (Check the flakiness with a fork)
  • Meanwhile, mix the remaining ingredients in a small bowl to combine.
  • Remove the fish from the oven and coat with the parmesan mixture with a spoon or spatula.
  • Start the oven broiler.
  • Place the fish under the broiler. about 6 inches from the heat, and broil for 3 to 5 minutes until browned.
  • Remove, let cool for a couple minutes then serve
