Ingredients

Dressing

  • 3 tbsp Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tsp apple cider vinegar
  • 1 tsp lime juice
  • 1 tsp Mexican style chili powder
  • 1 tsp Penzey's chicken taco seasoning
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • cayenne pepper for more heat if desired

Salad

  • 1 1/2 head romaine lettuce , chopped
  • 2 cups chopped chicken pieces
  • 1 cup frozen sweet corn
  • 1 15 oz . can black beans , drained and washed
  • 3 Roma tomatoes , seeds removed, diced
  • 1 cup red onion , chopped
  • 1 jalapeno pepper , diced
  • 4 oz . medium cheddar cheese , cut into 1/4" pieces
  • spicy nacho Doritos corn chips to crumble into salad if desired , (careful, as these add quite a few calories)

Instructions

Dressing

  • Mix all ingredients in a small bowl, store in the refrigerator until used

Salad

  • Assemble all ingredients in a large bowl.
  • Stir in the dressing when you are ready to serve.
