- 3 tbsp Greek yogurt
- 2 tbsp mayonnaise
- 1 tsp apple cider vinegar
- 1 tsp lime juice
- 1 tsp Mexican style chili powder
- 1 tsp Penzey's chicken taco seasoning
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp cumin
- cayenne pepper for more heat if desired
Salad
- 1 1/2 head romaine lettuce , chopped
- 2 cups chopped chicken pieces
- 1 cup frozen sweet corn
- 1 15 oz . can black beans , drained and washed
- 3 Roma tomatoes , seeds removed, diced
- 1 cup red onion , chopped
- 1 jalapeno pepper , diced
- 4 oz . medium cheddar cheese , cut into 1/4" pieces
- spicy nacho Doritos corn chips to crumble into salad if desired , (careful, as these add quite a few calories)
