Ground Pork Gravy with Mixed Vegetables on Rice

Ingredients

  • 1 cup long grain white rice, I used basmati rice
  • 1 lb ground pork
  • 1 cup yellow onion, chopped
  • 1 bell pepper, diced (any color)
  • 2 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 3 tbsp all purpose flour
  • 1 3/4 cups vegetable broth
  • 2 tsp sweet all-purpose herb mix, I used Penzeys Parisien
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  • Cook the rice in a large saucepan, using the pasta method, approximately 12 minutes until the rice is cooked through. Drain and keep warm.
  • In a large, high sided skillet add the vegetable oil, onion, bell pepper, garlic, salt, pepper, and the spice mix on medium heat and soften for 3 to 4 minutes. 
  • Add the ground pork and cook thoroughly about 8 minutes, breaking it up into small pieces.
  • Add the flour and stir to combine and let cook 2 minutes. Then stir in the broth and bring to a boil to thicken. 
  • Next, add the frozen vegetables, reduce the heat and let the vegetables heat up stirring occasionally, 4 to 5 minutes. Taste and adjust the seasonings as desired.
  • Serve the ground pork gravy over rice or mix it all together and serve hot.

Notes

  1. The spice blend contains chives, dill weed, basil, tarragon, chervil, and white pepper. Any mix of spices like this will up the flavor of the dish.
