Easy Black Beans Rancheros

Ingredients

  • 1 tbsp olive oil
  • 2 15 oz. cans black beans, drained and rinsed
  • 2 ripe tomatoes, chopped large slicing tomatoes are best
  • 1 jalapeno, minced
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp cumin
  • 1 tbsp Frank's hot sauce
  • 4 lg eggs
  • chopped green onion or cilantro for garnish
  • lime wedges

Instructions

  • Preheat oven to 350°.
  • Coat a cast iron skillet or oven safe casserole dish with the olive oil.
  • Place one can of beans in the skillet or casserole and mash with a potato masher. Add the rest of the beans along with the chopped tomatoes, jalapeno, salt, pepper, cumin, and hot sauce, Fold together to combine
  • Place into the oven 20 minutes to heat. Remove from the oven and use a large spoon to make 4 indentations. Crack one egg into each pocket.
  • Place back into the oven, 15 to 20 minutes until the egg whites are firm.
  • Serve garnished with green onions or chopped cilantro. Drizzle with fresh lime juice.
