Ingredients
4
tilapia fillets
, 5 to 6 oz each
1/2
cup
grated parmesan
3
tbsp
butter at room temperature
3
tbsp
mayonnaise or substitute Greek yogurt
3
chopped green onions
, light green and green parts
1
tbsp
tomato paste
1/4
tsp
Old Bay seasoning
1/4
tsp
dried basil.
1
tsp
Franks hot sauce
, or other hot sauce
salt and pepper to taste
Instructions
Pre-heat oven to 350°
Place the fillets on a foil lined sheet pan, salt and pepper them, and bake for 10 to 15 minutes until nearly done. (Check the flakiness with a fork)
Meanwhile, mix the remaining ingredients in a small bowl to combine.
Remove the fish from the oven and coat with the parmesan mixture with a spoon or spatula.
Start the oven broiler.
Place the fish under the broiler. about 6 inches from the heat, and broil for 3 to 5 minutes until browned.
Remove, let cool for a couple minutes then serve
