SURF AND TURF

Happy New Year!  It’s been a while since the last post and there have been a lot of changes in our lifestyle.  We are living on land now and I’m getting used to cooking on an electric stove.  In Florida, electric is used because of the dangers of gas during hurricanes.  That’s what I’ve been told anyway.  We contacted the power company to ask about getting gas hooked up and they said we’d also have to get a gas water heater and then make sure the kitchen cabinets were the proper distance from the stove, etc., etc.  Sounded like 4 or 5 thousand dollars before we bought a gas range, so we are adjusting. This surf and turf was prepared on our electric stove and our Weber gas grill, inspired by Giada, and taste tested.  It was determined to be delicious!

The surf part is actually mashed potatoes that are spiced up with herbs and delicious grilled shrimp bites added.  The beef was a nice ribeye steak, grilled on the gas grill.

Shrimp Mashed Potatoes:

1 1/2 to 2 lbs Yukon Gold potatoes, peeled and cubed

2 cloves garlic, peeled

2 tsp kosher salt

1 Lemon, zested

2 tsp chopped chives

2 tsp chopped flat leaf parsley

2 tsp fresh thyme chopped

2 tbsp butter

1/4 to 1/3 cup half and half

1/2 tsp fresh ground black pepper

And to cook the shrimp:

8 to 10 ounces medium shrimp, peeled and devained

2 tbsp butter

1/2 tsp kosher salt

1/2 tsp black pepper

chopped herbs

 

Cooking Instructions:

Boil the potatoes with 2 tsp salt and 2 cloves garlic until they are soft, (about 8 to 10 minutes). Drain and then add 2 tbsp butter, lemon zest, parsley, thyme and chives and 1/2 tsp black pepper.  Beat with hand mixer and add 1/4 cup half and half.  Mix until smooth.  Add more half and half if necessary.

Saute shrimp in pan on medium heat with 2 tbsp butter and 1/2 tsp salt and 1/2 tsp black pepper.  Cook until pink on both sides, (about 4 minutes).  Cool and then chop into 1/2 inch chunks.  Then, stir into mashed potatoes with juices from the skillet used to saute the shrimp.  Taste and add salt if needed.

Shrimp

Serve with your choice of beef.

This is really tasty and easy.  Pretty much refrigerator to serving in 30 minutes.
