Pizza has got to be a favorite with almost everyone and the perfect pizza is a great casual meal. I’ve always had my favorite places to get pizza in Minnesota and now favorite places in Florida.
Good pizzas always have a balance of spices and mouth feel with the crust you like and perfect toppings. The neat thing is that you can create the perfect pizza in your own kitchen! Try this pizza sauce recipe!
Perfect pizza starts with the sauce. Create a great sauce and I think you have the start of a great pizza. Combine this with a good crust and fresh toppings and you’ll have some wonderful tasting pizza. I’ve experimented with a lot of different ways to do the sauce and I think I have finally come up with a killer pizza sauce recipe. Try this and let me know what you think.
We first need a good crust and the crust recipe that I prefer is from Bobby Flay. It’s very simple and creates a crispy thin crust. It uses bread flour, (not All-Purpose), which will make the crust more crispy.
4 cups Bread flour
1 tsp sugar
2 tsp kosher salt
1 envelope instant dry yeast, (2 tsp approx.)
2 tbsp olive oil
1 1/2 cups water @ 110 degrees F
In a blender, add flour, salt,sugar and yeast. Mix at low speed and add the olive oil and water. Mix until well blended. The dough should form a ball when done. Add more flour if it seems too sticky; more water, 1 tbsp at a time, if too dry. The dough should form a sticky ball when done. Knead the dough with a stand mixer with a dough hook, or by hand on a floured surface for at least ten minutes then place the dough ball in a bowl that’s been oiled with 2 tsp olive oil. Cover and let rise in a warm location until the dough doubles in size, (about an hour). When done, separate into two equal balls and let rest for another 15 minutes. Roll out dough to make 2, 14 inch rounds or 2, 9 by 12 inch rectangles. (Kneading the dough for 10 to 20 minutes by machine with a dough hook or by hand will produce chains of glutens. This makes the dough easier to shape and the dough will have less spring back).
Sauce Ingredients (enough for 2 pizzas)
2 14oz cans tomato sauce
2 Tbsp finely chopped fresh basil
1 Tbsp finely chopped fresh oregano
4 lg cloves garlic, minced
2 tsp ground thyme
2 tsp ground fennel
2 tsp dry oregano
1 tsp red pepper flakes, (more for a little more heat)
Mix all ingredients in a bowl and let the sauce sit for about 1 hour for ingredients to meld and dry ingredients to soften.
Add sauce to the crust and add toppings of your choice. I used 1 small onion, 1/2 sweet pepper, 1/2 cup black olives halved, 2 cups sliced mushrooms, (place mushrooms on a plate with paper towels and microwave for 2 minutes to cook some of the water out of the mushrooms. Pat the mushrooms with a paper towel when done. That way, the mushrooms won’t add extra sogginess to the crust), and 8 ounces mozzarella cheese per pizza. Preheat oven to 400 degrees or 375 degrees, convection bake. Bake pies for 18 minutes or until well browned. Slice and enjoy!
