Caprese salad is an end of summer treat. The tomatoes are coming in and the basil needs to be used before it flowers too much. Find yourself some really fresh mozzarella cheese and delicious tasting extra virgin olive oil and make yourself an easy caprese salad!
The key to this salad is to not over think it too much. Find the freshest ingredients you can find and in a couple minutes, you’ll have the best salad of the summer.
Tomatoes… grow your own, or, go to the farmers market near you and pick up several varieties. Heirlooms, beefsteaks or cherries. Several varieties make this salad a visual treat.
Fresh mozzarella cheese…the fresher the better. If you have a good cheese store near you they probably make their own fresh mozzarella. It will be soft and dripping with the liquids it is made from. The store bought varieties are good, but not as good as the cheese that is made the same day you buy it. If you can find fresh mozzarella, buy it and your salad will be better for it.
Olive oil…use the best olive oil you can find or can afford. There are lots of olive oils, but make sure you get the first cold press kind and it is also fresh. I used a first cold pressed oil from Sicily that was estate grown and processed. It has grassy notes that finish with a peppery flavor. Seems like there are lots of new specialty shops that have lots of olive oils to choose from. Buy one you think tastes best and use it for special occasions, like for making easy caprese salad!
Salt and pepper…only use course grinds. Course kosher salt and fresh course ground black peppercorns. They impart their unique texture in this simple salad.
The ingredients of this salad are simple. Use your own discretion as to the quantities you want to make. Share a plate with friends and family. Just don’t try to improve on the flavor by adding a bunch of extra spices. It doesn’t need any balsamic vinegar or oregano or thyme. Tomatoes, mozzarella, basil, olive oil and salt and pepper are all you need for a delicious easy caprese salad. Joe x

- Kosher salt
- Ground black pepper
- Extra Virgin olive oil to coat
- Arrange tomatoes, mozzarella and basil on a plate
- Coat with salt and pepper
- Drizzle salad with olive oil to coat
