Time flies when you’re having fun. Mary Jo and I just got back from a week vacation in Nisswa, Minnesota staying at Causeway on Gull in a beautiful timeshare condo with her two brothers, and cousin and spouses. We all had a great time, and the weather was beautiful. Of course we ate too much, because that’s what you do on vacation. I thought it was time to get back to a healthier meal and prepared this baked tilapia parmesan for us last night.
If you’ve had tilapia, you probably know that it is a fish with not a lot of flavor. It needs to be kicked up with spices. I usually put some blackening seasoning on it and pan fry the fish. I recently saw a photo of baked tilapia parmesan on Pinterest and it was something that I hadn’t seen before. And, by the way. I am all over Pinterest looking at yummy food photos. So I saw this parmesan tilapia and knew I had to try it. Turns out that it is wonderful. Just like a chicken parmesan except that it is on the baked fish. The preparation is simple and doesn’t take long to put together. The parmesan gives the fish a nice crust and a great flavor. It’s something you wouldn’t expect from tilapia and is a nice change of pace. You could also use this parmesan topping on cod and I think that would be really good.
When you prepare this, make sure that you cover your pan with some foil. As you can see, the parmesan starts to flow under the broiler.
We had our baked tilapia parmesan with some sauteed peppers and onions. I just fixed the peppers as I did in the recipe for bruschetta and sauteed peppers. They tasted great together.

Baked Tilapia Parmesan
- 4 tilapia fillets , 5 to 6 oz each
- 1/2 cup grated parmesan
- 3 tbsp butter at room temperature
- 3 tbsp mayonnaise or substitute Greek yogurt
- 3 chopped green onions , light green and green parts
- 1 tbsp tomato paste
- 1/4 tsp Old Bay seasoning
- 1/4 tsp dried basil.
- 1 tsp Franks hot sauce , or other hot sauce
- salt and pepper to taste
- Pre-heat oven to 350°
- Place the fillets on a foil lined sheet pan, salt and pepper them, and bake for 10 to 15 minutes until nearly done. (Check the flakiness with a fork)
- Meanwhile, mix the remaining ingredients in a small bowl to combine.
- Remove the fish from the oven and coat with the parmesan mixture with a spoon or spatula.
- Start the oven broiler.
- Place the fish under the broiler. about 6 inches from the heat, and broil for 3 to 5 minutes until browned.
- Remove, let cool for a couple minutes then serve
