Creamy avocado sauce is an easy condiment to throw together and is great when paired with grilled or pan fried fish.
A couple days ago, MaryJo and I asked some friends of ours to come over to our place to have supper. I had tried a recipe a couple times and had altered it to perfection, I my mind anyway. I needed some feedback. It’s a recipe to use with fish. I love fish and could eat it daily. Especially when we have Jensen Bros close by. Florida fresh fish!
Well I had bought some red grouper and turns out Ian, our friend, had been fishing on the gulf and had some frozen, fresh caught fish. He said he had Spanish mackerel and grunts. (What the heck! I’m not eating grunts). Okay, I know what grunts are but a lot of people don’t. They are small fish that are quite abundant and very tasty. But they are called grunts! You always keep grunts because they so are good! Ian is a guy with some sensitivity and said that the fish deserves a better name and said they are really grey snappers! Grey Snappers! I’ll eat grey snappers. That’s what we had with the creamy avocado sauce. Grey snappers are really good!
I gotta say that this is a recipe that Giada had on one of her shows, altered several times to make it work for me. She served it on grilled tofu. I’m not a tofu guy but if you want it on tofu, cut off 1/2 inch strips and season with herbs de Provence and grill until browned.
I prefer creamy avocado sauce on pan fried fish. The sauce is a great compliment to fried fish and really good with blackened fish. Anyway, you’ve got to try it. I’ve tried it with red grouper, Spanish mackerel, grunts, (grey snapper), and haddock. This is haddock in the pictures. Also tried it with seared scallops, but didn’t think that the combination worked too well. Stick with some good seasoned white fish.
You can never go wrong with fresh ingredients.
Creamy Avocado SaucePrint Pin Rate
- 1 ripe haas avocado
- 1 large garlic clove
- 1/4 cup fresh cilantro
- 1/4 cup extra virgin olive oil
- 1/2 cup vegetable broth
- zest and juice of 1 lime
- 1/2 tsp Kosher salt
- 1/2 tsp crushed red pepper flakes
- Combine ingredients in a food processor and puree until smooth.
- Serve over grilled fish
