So yesterday, I went to the Save-a-Lot market, (which is a Super Value store), and bought some veggies and some rib-eye steak. Save-a Lot always has great produce, and is usually half the price of the other supermarkets. The freshness of the produce also reminds me of the Cub Foods store we had in Stillwater, Minnesota. So, I also needed more avocados and pear tomatoes for yesterday’s guacamole. Sweet indulgence!
I also bought the rib eye and at under $6.00 a pound, the steak was hard to resist. Two filets for under $7.00! I’ll grill that on the small Weber gas grill.
Cauliflower Side Dish is what I decided to make. Saute some mushrooms and onions and mix in some horseradish and you have a great substitute for the starchy vegetables that are usually served with beef.
Ingredients: (feeds 2 or 3 people)
1/2 to 3/4 head of cauliflower, (grated in food processor, makes 3 cups)
1 cup mushrooms, (6 medium button), sliced
2 green onions, thinly sliced
1 large shallot, diced
1/2 tsp kosher salt
1/2 tsp ground black pepper
3 tbsp canola oil
1 tsp prepared horseradish
2 tbsp chopped flat leaf parsley
2 tbsp butter
On medium heat in large skillet, add canola oil, onion, shallot, mushrooms and salt and pepper. Saute for about 3 minutes. Meanwhile in a food processor, pulse cauliflower until medium grated, ( or course you can hand grate the cauliflower). Add grated cauliflower to skillet with the butter, horseradish and parsley. Slowly cook for 7 or 8 minutes stirring constantly. Check flavor and salt and pepper as needed, (maybe even a little more horseradish). Serve when softened.
The cauliflower was a very nice substitute for potatoes and perfect with the steak.. Hope you’ll try this.
